- 2 cans (15 ounces each) white beans (cannellini or navy), rinsed and drained

Instructions
- Rinse and drain the white beans thoroughly. Chop the cherry tomatoes, bell peppers, red onion, parsley, and basil.
- In a small bowl or jar, mix together olive oil, vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
- In a large mixing bowl, combine the prepared beans with tomatoes, bell peppers, red onion, parsley, and basil. Pour the dressing over the mixture.
- Toss gently until all ingredients are coated. Taste and adjust seasoning if necessary.
- Serve immediately or chill in the refrigerator for about 30 minutes to enhance flavors.
