Instructions
- Prepare all ingredients by cutting chicken into bite-sized pieces and chopping vegetables.
- In a bowl, marinate the chicken with soy sauce, minced garlic, grated ginger, and optional sesame oil for about 15 minutes.
- Heat cooking oil in a wok or large skillet over medium-high heat; stir-fry the marinated chicken until golden brown (6-8 minutes).
- Add bell peppers, onion, and pineapple to the pan; stir-fry for an additional 5-7 minutes until vegetables are tender.
- Stir in cooked rice and heat through for another 2-3 minutes; adjust seasoning if needed.
- Serve hot garnished with lime wedges and optional cilantro.
