- 3 large eggs (lightly beaten)
- 2 egg yolks (lightly beaten)
Instructions
- Melt the butter in the microwave for about 30 seconds until slightly melted.
- In a mixing bowl, whisk together the lemon zest, fresh lemon juice, sugar, lightly beaten eggs, and egg yolks until well combined.
- Place the mixture in the microwave, heating in one-minute intervals while whisking between each interval until thickened enough to coat the back of a spoon (about 3-4 minutes).
- Strain the mixture through a metal sieve into another bowl to remove any lumps and let it cool in the refrigerator until fully set.
