Ingredients
- 1 lb rotini pasta
- 16 oz Italian salad dressing
- 8 oz mozzarella cheese, cubed
- 1 cup cooked chicken, diced
- 1/2 cup mini turkey pepperoni
- 1/2 cup olives, sliced
- 1 cup grape tomatoes, halved
- 1/4 cup flat-leaf parsley, chopped
- Salt & pepper to taste
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain and let cool.
- In a large mixing bowl, combine the cooled rotini with half of the Italian dressing.
- Add mozzarella cheese, diced chicken, turkey pepperoni, olives, grape tomatoes, and parsley. Season with salt and pepper.
- Mix well until all ingredients are evenly combined.
- Cover and refrigerate for at least one hour before serving. Just before serving, stir in the remaining Italian dressing.
