  • 16 oz Italian salad dressing
  • 8 oz mozzarella cheese, cubed

  • 1/2 cup mini turkey pepperoni

  • 1 cup grape tomatoes, halved
  • 1/4 cup flat-leaf parsley, chopped
  • Salt & pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and let cool.
  2. In a large mixing bowl, combine the cooled rotini with half of the Italian dressing.
  3. Add mozzarella cheese, diced chicken, turkey pepperoni, olives, grape tomatoes, and parsley. Season with salt and pepper.
  4. Mix well until all ingredients are evenly combined.
  5. Cover and refrigerate for at least one hour before serving. Just before serving, stir in the remaining Italian dressing.
