Instructions

  1. Drain the tofu and cut into 1.5-inch cubes.
  2. In a mixing bowl, whisk together garlic, ginger, soy sauce, rice vinegar, maple syrup, and additional marinade ingredients.
  3. Add tofu to the marinade and refrigerate for at least an hour.
  4. Soak wooden skewers in water for 10 minutes to prevent burning.
  5. Thread tofu and vegetables onto skewers alternating pieces as desired.
  6. Grill over medium-high heat for about 3 minutes per side until lightly charred.
