- 1/3 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup
- 1 medium red onion (cut into 1.5-inch chunks)
- 1 red bell pepper (cut into 1.5-inch chunks)
- 1 yellow bell pepper (cut into 1.5-inch chunks)
- 1 medium zucchini (cut into 1.5-inch chunks)
- 16 small mushrooms
Instructions
- Drain the tofu and cut into 1.5-inch cubes.
- In a mixing bowl, whisk together garlic, ginger, soy sauce, rice vinegar, maple syrup, and additional marinade ingredients.
- Add tofu to the marinade and refrigerate for at least an hour.
- Soak wooden skewers in water for 10 minutes to prevent burning.
- Thread tofu and vegetables onto skewers alternating pieces as desired.
- Grill over medium-high heat for about 3 minutes per side until lightly charred.
- Brush remaining marinade on skewers while cooking for extra flavor.
