  • 1.5 tbsp honey
  • 1.5 tbsp lemon juice
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp herbs de provence
  • 3/4 tsp cinnamon
  • 1/2 tsp cumin
  • 1 egg
  • 1/2 cup panko
  • 1 shallot, chopped
  • 3 green onions, chopped
  • 3/4 cup cilantro, chopped
  • 1/2 cup dill, chopped
  • 1.5 cup basil, chopped
  • 1 jalapeño, seeded and finely minced
  • 3 cloves garlic, freshly pressed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss chickpeas with olive oil and seasonings; roast for 20-25 minutes until crispy.
  3. In another bowl, combine cubed sweet potatoes with oil and seasonings; roast alongside chickpeas for 25-30 minutes until tender.
  4. Mix ground chicken, ricotta, egg, panko, chopped shallot, green onions, fresh herbs, lemon zest, salt, and pepper in a bowl; form into meatballs.
  5. Bake meatballs on a greased sheet for about 20 minutes until cooked through.
  6. Whisk together yogurt sauce ingredients in a bowl until smooth.
