  • 1.5 oz lemon juice
  • 1 lemon zest
  • 1/3 cup parsley
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1/2 white onion
  • 2 tsp garlic
  • 2.5 tsp oregano
  • 1 tsp basil
  • 1/3 cup sun dried tomatoes
  • 1 cucumber
  • Kalamata olives

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, lemon juice, olive oil, dill, minced garlic, chopped cucumber, and mint in a bowl. Refrigerate.
  2. Cook white rice in chicken broth according to package instructions. Once done, mix in butter, lemon juice, lemon zest, and parsley.
  3. In a skillet, heat olive oil and sauté diced onion until translucent. Add ground turkey along with garlic and dried herbs; cook until browned.
  4. Assemble each bowl starting with rice at the base. Top with the turkey mixture and garnish with grape tomatoes, red onion, sun-dried tomatoes, cucumber, parsley, olives, and a dollop of tzatziki.
