- 1 tbsp red apple vinegar

- 1.5 cups white rice
- 3 cups chicken broth
- 1.5 tbsp butter
- 1.5 oz lemon juice
- 1 lemon zest
- 1/3 cup parsley
- 2 tbsp olive oil
- 1 lb ground turkey
- 1/2 white onion
- 2 tsp garlic
- 2.5 tsp oregano
- 1 tsp basil
- 1/3 cup sun dried tomatoes
- 1 cucumber
- Kalamata olives
Instructions
- Prepare the tzatziki sauce by mixing Greek yogurt, lemon juice, olive oil, dill, minced garlic, chopped cucumber, and mint in a bowl. Refrigerate.
- Cook white rice in chicken broth according to package instructions. Once done, mix in butter, lemon juice, lemon zest, and parsley.
- In a skillet, heat olive oil and sauté diced onion until translucent. Add ground turkey along with garlic and dried herbs; cook until browned.
- Assemble each bowl starting with rice at the base. Top with the turkey mixture and garnish with grape tomatoes, red onion, sun-dried tomatoes, cucumber, parsley, olives, and a dollop of tzatziki.
