- 1 lb fresh skinless salmon fillets
- 1 cup plain breadcrumbs

- 1 ripe avocado
- ½ cup plain Greek yogurt

- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Flake the salmon into small pieces in a large mixing bowl, then add breadcrumbs, egg, chopped herbs, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
- Form small balls (about 1 inch in diameter) from the mixture and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown.
- For the sauce, blend avocado, Greek yogurt, lemon juice, salt, and pepper in a food processor until smooth.
- Serve warm with the creamy avocado sauce.
