Instructions
- Prepare the seafood: Peel and devein the shrimp and cut mahi mahi into cubes.
- Make the marinade: In a large bowl, mix lime juice, olive oil, crushed garlic, salt, and pepper. Add seafood and coat well. Cover and chill for 1 hour.
- Assemble kabobs: Thread shrimp and mahi mahi alternately onto skewers.

- Prepare jalapeno butter: Blend softened butter with chopped jalapeno until well mixed.
- Serve: Place skewers over rice, top with jalapeno butter, and garnish with cilantro.
