  • 23 lbs chicken breasts, cut into pieces
  • 1/3 cup vegetable oil (for brushing)
  • 2 cups milk
  • 2 tbsp Sriracha sauce
  • 2 tsp salt
  • 2 tsp sugar
  • 1 egg
  • 1 1/2 cups flour
  • 2 tsp BBQ rub
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp garlic powder

Instructions

  1. Cut chicken breasts into even pieces.
  2. In a large bowl, combine milk, Sriracha sauce, salt, and sugar. Whisk and marinate chicken for at least one hour in the refrigerator.
  3. Preheat smoker or grill to about 225°F (107°C).
  4. Remove chicken from marinade and dredge in a mixture of flour, BBQ rub, onion powder, garlic powder, and salt until fully coated.
  5. Smoke chicken pieces for approximately one hour or until they reach an internal temperature of at least 165°F (74°C).
  6. For extra crispiness, brush with vegetable oil before serving or place under a broiler for a few minutes.
