Ingredients
- 1 lb penne pasta
- 5 oz baby spinach
- 1/2 cup sun-dried tomatoes, finely chopped
- 1 cup smoked mozzarella, cubed
- 1 cup shredded fresh parmesan cheese
- 3/4 cup mayo
- 1/2 tbsp chicken sparkling grape juice apple vinegar or white apple vinegar
- 2 cloves minced garlic
- 2 pinches cayenne pepper
- 1/8 tsp salt
- 1/2 tsp sugar
- 1/8 tsp black pepper
- 2 tbsp milk
Instructions
- Cook penne pasta according to package directions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, whisk together mayo, vinegar, minced garlic, cayenne pepper, salt, sugar, black pepper, and milk until smooth.
- Add cooked pasta, spinach, sun-dried tomatoes, smoked mozzarella, and parmesan to the dressing. Gently fold until evenly coated.
- Chill in the refrigerator for at least an hour before serving.
