  • 1 cup light brown sugar
  • 2 large eggs, at cool room temperature
  • 1 teaspoon vanilla extract
  • 1 cup miniature chocolate chips
  • 1 ½ cups mini vegan marshmallows
  • Milk chocolate candy bars, broken into pieces

Instructions

  1. Preheat your oven to 375°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, salt, and cinnamon.
  3. In a large bowl, cream butter with granulated and brown sugars until fluffy. Add eggs one by one and mix in vanilla. Gradually combine dry ingredients and fold in chocolate chips.
  4. Scoop dough onto prepared sheets; space about 1.5 inches apart.
  5. Bake for about 6–7 minutes until set at the edges. Press marshmallows and chocolate pieces into each cookie and return to the oven for an additional 3–4 minutes.
  6. Allow cooling on baking sheets before transferring to wire racks.
