Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Spread the softened sugar cookie dough evenly into a round shape on the prepared baking sheet.
- Bake for about 20 minutes until lightly golden brown. Allow cooling completely.
- In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
- Slice half of the fresh strawberries for topping. In a saucepan, combine water and sugar over medium heat until dissolved.
- Mix in the vegan gelling agent and cornstarch; cook until thickened.
- Spread frosting over the cooled cookie base, arrange sliced strawberries on top, and drizzle glaze over them.
- Chill before serving for best results.
