- 2 cups freeze-dried strawberries
- 1 cup melted salted butter
- 1/3 cup plain Greek yogurt or sour cream
- 2 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1 cup high-quality strawberry jam
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup warm milk
- 2 ounces cream cheese, at room temperature
- 2 cups powdered sugar
- 2–3 tablespoons freeze-dried strawberry powder
- 1/4 cup hot milk, plus more as desired
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
- In a blender, process the freeze-dried strawberries into a fine powder; set aside.
- In a large mixing bowl, beat together melted butter, yogurt, eggs, sugar, strawberry jam, and vanilla until well combined.
- Add flour, baking powder, baking soda, salt, and half of the prepared strawberry powder; mix until just combined.
- Gradually add warm milk while stirring until fully incorporated.
- Pour batter into the prepared pan and bake for 30–35 minutes until set in the center; allow cooling completely.
- For frosting, blend cream cheese with powdered sugar and remaining strawberry powder; gradually add hot milk until desired thickness is reached.
- Spread or pour frosting over cooled cake and let it set before slicing.
