Instructions
- Wash the spinach thoroughly and pat dry. Drain mandarin oranges and ensure they are patted dry.
- In a skillet over medium heat, toast the almonds for about 5 minutes until fragrant.
- For the dressing, whisk together olive oil, Dijon mustard, honey, balsamic vinegar, salt, and pepper in a medium bowl.
- In a large salad bowl, combine spinach, mandarin oranges, toasted almonds, goat cheese, red onion, and dried cranberries.
