- 1 lb boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks
- 1 red bell pepper
- 1 yellow bell pepper
- ½ cup red onion
- ¼ cup low-sodium soy sauce
- 2 Tbsp rice vinegar
- 3 Tbsp ketchup
- 2 Tbsp brown sugar
- 1 Tbsp honey
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tsp cornstarch mixed with 2 Tbsp water (slurry)
- 1 Tbsp sesame oil
- 2 Tbsp olive oil (for grilling)
- 1 Tbsp toasted sesame seeds, for garnish
- 2 Tbsp sliced green onions, for garnish
Instructions
- Marinate the chicken by combining it with half of the soy sauce, salt, and sesame oil in a bowl. Let it rest for 10 minutes.
- Assemble the skewers by threading marinated chicken alternately with pineapple chunks, bell peppers, and red onion.
- Prepare the sweet and sour sauce by simmering the remaining soy sauce, rice vinegar, ketchup, brown sugar, honey, ginger, and garlic in a saucepan until thickened.
- Preheat grill or oven; cook skewers for about 3–4 minutes per side until golden brown. Brush with sauce during the last few minutes.
- Serve garnished with sesame seeds and green onions.
