  • 1 Tbsp sesame oil
  • 2 Tbsp olive oil (for grilling)
  • 1 Tbsp toasted sesame seeds, for garnish
  • 2 Tbsp sliced green onions, for garnish

Instructions

  1. Marinate the chicken by combining it with half of the soy sauce, salt, and sesame oil in a bowl. Let it rest for 10 minutes.
  2. Assemble the skewers by threading marinated chicken alternately with pineapple chunks, bell peppers, and red onion.
  3. Prepare the sweet and sour sauce by simmering the remaining soy sauce, rice vinegar, ketchup, brown sugar, honey, ginger, and garlic in a saucepan until thickened.
  4. Preheat grill or oven; cook skewers for about 3–4 minutes per side until golden brown. Brush with sauce during the last few minutes.
  5. Serve garnished with sesame seeds and green onions.
