- about 12 maraschino cherries
- 1 cup all-purpose flour
- 3/4 cup granulated sugar

- 1 large egg
- 1/2 cup buttermilk or powdered buttermilk
- 1/3 cup sour cream or plain Greek yogurt
- 3 tablespoons canola oil
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9-inch springform pan by greasing it with melted butter and sprinkling brown sugar evenly.
- Arrange pineapple slices and cherries in the pan.
- In one bowl, whisk together dry ingredients: flour, granulated sugar, baking powder, and salt.
- In another bowl, mix wet ingredients: egg, buttermilk, sour cream, oil, and vanilla.
- Combine wet and dry mixtures until just combined; pour batter over the fruit.
- Bake for about 40 minutes or until a toothpick comes out clean.
- Allow cooling before inverting onto a serving plate.
