- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- ¼ – ½ cup chopped basil
- ½ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 3–4 minced garlic cloves
- ¾ tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini in a large pot of boiling salted water according to package instructions until al dente. Drain and rinse under cool water.
- In a mixing bowl, combine the cooled tortellini, chopped spinach, cherry tomatoes, mozzarella pearls, basil, and minced garlic.
- Drizzle olive oil and balsamic vinegar over the salad mixture. Add Italian seasoning, salt, and pepper; toss well to coat.
- Cover and chill for at least 30 minutes before serving. Toss again before serving and drizzle with balsamic glaze if desired.
