- 3 whole peaches (grilled)

Instructions
- Heat a skillet over medium heat and cook diced turkey strips until crisped, about 10 minutes. Drain excess fat.
- Boil water in a pot and cook tortellini according to package instructions. Drain and rinse under cool water.
- Slice peaches in half, remove pits, and grill on medium heat until charred (5-7 minutes).
- In a large mixing bowl, combine cooked tortellini, turkey strips, and grilled peaches. Drizzle with vinaigrette and toss gently.
- Top with crushed pistachios and dollops of ricotta cheese. Serve chilled or at room temperature.
