Instructions
- Grease and flour a 3-quart loaf pan and place it inside a 6-quart crockpot.
- Prepare flax eggs by mixing ground flaxseed with water; let sit for 5 minutes.
- Cream together vegan margarine and brown sugar until fluffy.
- Mix in flax eggs, vanilla extract, and mashed bananas until smooth.
- In a separate bowl, whisk together flour, baking powder, salt, and baking soda.
- Gradually combine dry mix into wet ingredients; fold in nuts or berries.
- Pour batter into the prepared loaf pan and cover the crockpot lid.
- Cook on HIGH for about 2–3 hours; check doneness with a toothpick.
- Let cool for 15–20 minutes before slicing.
