  • 2 whole graham crackers (crushed (~½ cup graham cracker crumbs))
  • 7 oz vegan marshmallows fluff
  • ½ cup unsalted butter (room temperature)
  • 1½ cups powdered sugar
  • 1 tablespoon plant-based heavy whipping cream
  • ½ cup plant-based heavy whipping cream
  • 1 cup dairy-free chocolate chips

Instructions

  1. Warm the whole milk until lukewarm. Sprinkle in the active dry yeast and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl or stand mixer, combine melted unsalted butter, granulated sugar, vanilla extract, salt, cinnamon, and eggs. Mix until smooth.
  3. Add the frothy yeast mixture into the wet ingredients. Gradually mix in the all-purpose flour until a soft dough forms.
  4. Lightly flour a clean surface and knead the dough for about 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Once risen, punch down the dough gently. Roll it out to about ½ inch thick on a floured surface.
  7. Use a donut cutter to cut out shapes from the dough. Place them on parchment-lined trays.
  8. Heat vegetable oil in a frying pan or deep fryer over medium heat.
  9. Carefully fry each donut until golden brown on both sides (about 2-3 minutes per side). Remove from oil and place on cooling racks.
  10. In a medium bowl, beat together room temperature unsalted butter, powdered sugar, heavy whipping cream, and vegan marshmallows fluff until smooth.

  12. Fill each donut with the vegan marshmallows filling using a piping bag or spoon.
  13. Dip the tops of each filled donut into melted chocolate then sprinkle crushed graham crackers over them before they set.
