- 1 cup cooked shrimp (or chicken)

- 1/2 cup cooked rice
- 1 tbsp Cajun seasoning
- 6–8 egg roll wrappers
- Water, for sealing the edges
- Vegetable oil for frying
Instructions
- Prepare the filling by mixing shrimp, chicken sausage, cheddar cheese, bell pepper, onion, cooked rice, and Cajun seasoning in a bowl until well combined.
- Lay an egg roll wrapper on a surface and place about two tablespoons of filling near the center.
- Moisten the edges of the wrapper with water; fold the bottom corner over the filling tightly and seal by folding in the sides before rolling it up completely.
- Heat vegetable oil in a frying pan over medium-high heat. Fry egg rolls seam-side down until golden brown and crispy on both sides (about 3-4 minutes each side).
- Drain on paper towels and serve warm with your choice of dipping sauces.
